Baked Stuffing

This stuffing is so tender and delicious on its own, you won’t need to drown it in gravy. (Although I suppose you could.) And I think it would turn to mush inside a turkey or chicken, so I wouldn’t recommend trying that. (Although I suppose you could!)
In any case, it’s really good just as it is. The amount of apples and vegetables is only a general guide. Feel free to adjust according to your own taste.


1 small onion, chopped

3 stalks celery, chopped

2 small green apples, peeled and chopped

2 tablespoons coconut oil or butter

1 cup smooth, salted almond butter

1-cup coconut butter or coconut manna (NOT coconut oil!)

3 eggs

2 teaspoons powdered sage

1 teaspoon powdered dried thyme

1/2-teaspoon salt

1/4-teaspoon pepper

Pre-heat oven to 350°. Butter or oil an 9 x9” baking dish.


In a large sauté pan, heat coconut butter or oil over medium heat. Add onions, celery and apples and cook until tender, about 7-8 minutes. Remove from heat and reserve.


Place coconut butter, almond butter, eggs, salt, pepper and herbs into the bowl of a food processor. Process until evenly mixed and completely smooth. (Stop the motor and scrape mixture down from sides once or twice.)


Pour mixture into a large mixing bowl. Add apples, celery and onions and stir until evenly mixed. Pour mixture into the prepared baking dish.


Bake in preheated oven for about 45 minutes. Check with a cake tester for doneness
